Apple Coffee Cake
Apple Filling
2 apples, peeled and chopped
1/4 cup water
3 Tbs coconut sugar/ or brown sugar
2 tsp cinnamon
1/4 tsp nutmeg
2 tsp tapioca flour/ or (corn starch stirred in a 1/4 cup cold water until dissolved)
pinch of salt
Crumble
1/2 cup flour
1/4 cup coconut oil/ or butter
1/3 cup coconut sugar/ or brown sugar
1 tsp cinnamon
Cake
3 eggs
1/4 cup applesauce
1/4 cup coconut oil, melted/ or butter
1 tsp pure vanilla
2/3 cup coconut sugar/ or brown sugar
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp apple pie spice
1 tsp cinnamon
Apple Filling
Combine water, apples, and a splash of lemon juice in a saucepan
Bring to a boil over medium heat and cook until softened, roughly 15 min
Mix in dry ingredients until dissolved and the mixture thickens
Remove from heat and set aside
Crumble
Add all ingredients and mix together with a fork until a crumble forms
Set aside
Cake
Preheat the oven to 350 degrees
Line a bread pan with parchment paper and spray with cooking spray
Combine all the dry ingredients in a bowl and mix together: flour, baking soda, salt, and spices-set aside
In a separate bowl, beat together the eggs, applesauce, sugar, coconut oil, and vanilla
Add the dry ingredients with the wet ingredients and mix until just combined
Place the mixture into the prepared bread pan and pour the apple filling into the mixture
Using a fork, gently fold in the apple filling
Sprinkle the crumble topping over it
Bake in the oven for 50 minutes
Allow to cool for 20 minutes and enjoy!
