Eggnog

Serves 8-10 

This recipe is out of this world delicious. Try it with your next brunch! 
4 C milk 
4 C light cream 
5 whole cloves 
1/2 t vanilla 
1 t cinnamon 
12 egg yolks 
1 1/2 C maple syrup 
1 C black spiced rum 
2 t vanilla 
1/2 t nutmeg 

Combine milk, cream, cloves, 1/2 t vanilla, and cinnamon in a saucepan. Heat over lowest setting for 5 mins. Slowly bring to a boil, stirring constantly. 

In a large bowl, combine egg yolks and syrup. Whisk together until fluffy. 

Whisk hot milk mixture slowly into eggs. 

Pour mixture back into the saucepan. Cook over medium heat, stirring constantly for 3 minutes or until thick. Do not allow it to boil. 

Strain to remove cloves. Stir in rum, 2 t vanilla, and nutmeg. 

Serve warm, or refrigerate overnight before serving.
